This is one of my favorite easy recipes that I include most weeks into my meal prep.
You will love it and the kids will too!
Makes 4 servings
2 cups filtered water
1/4 cup chia seeds
1/4 cup cashews
4-5 dates or 2-3 tbsp maple
1 tsp vanilla
Pinch of sea salt
2 cups berries of choice
In a high speed blender add the cashews, water, dates, vanilla, and sea salt. Blend until completely smooth.
Pour the mixture into a large bowl and whisk in the chia seeds.
Allow 5-10minutes for the chia seeds to gel up and thicken the consistency.
Divide the pudding into 4 containers or jars and top equally with the 2 cups of berries.
Store in the fridge for 5-6 days.
